After a couple of weeks of enjoying the VU FoodBox, I somehow always ended up the one vegetable that I couldn’t figure out what to do with… beets! I had never cooked with or used these round, red, root vegetables before, so, as a professional procrastinator, I let them sit undisturbed at the bottom of the fridge until the very last minute.
Even though the Green Office had a lovely post on Instagram about beets on valentines day, honestly my heart just didn’t skip a beet. So, in an attempt to let my beets reach their full potential, I turned to the modern oracle: Google. What I found was a beet burger and, from the photos on the blog post, it looked delicious! When searching at the ingredients list, I noticed that most fresh ingredients were in my box as well: carrots, onions, courgette, spring onions.

So 20 minutes in and I had chopped everything and ended up with a nice bowl of vegetables:
Ingredients in the bowl:
- 3 beetroots, grated;
- 2 potatoes, grated;
- 1 onion finely chopped;
- 1 courgette, grated;
- 2 spring onions;
- 1 egg;
- 3 tbsp olive oil;
- 2 cloves of garlic, finely chopped.
15 minutes later and I was the proud creator of my first homemade veggie burger. Add some lettuce, tomato, and pickles and you will end up with a proper burger!
Tip: put mustard on the inside of the burger buns and fry them shortly in a frying pan. That adds a huge amount of taste to your buns.
In 30 minutes I made myself a delicious beets burger using the ingredients of the VU FoodBox!
