📝 Ingredients

For the oats

  • 1 cup oats (any type)

  • 3 tbsp cocoa powder

  • 2 tbsp chia seeds

  • Pinch of salt

  • 3 tbsp cooled coffee (espresso, brewed, or instant)

  • 1.5 cups almond milk (or any unsweetened non‑dairy milk)

  • 3 tbsp maple syrup

  • 1.5 tsp vanilla extract

For the mascarpone‑style topping

  • 1 cup coconut or soy yogurt (unflavoured)

  • Remaining maple syrup (1 tbsp)

  • Remaining vanilla extract (0.5 tsp)

👩‍🍳 Directions

  1. In a large bowl, combine oats, cocoa powder, chia seeds, and salt.

  2. Add the coffee, almond milk, 2 tbsp maple syrup, and 1 tsp vanilla. Mix well.

  3. Transfer to a closed container and refrigerate overnight.

  4. For the mascarpone‑like topping, mix the coconut yogurt with the remaining maple syrup and vanilla.

  5. Divide half the oats between two jars or bowls.

  6. Add a layer of the mascarpone topping, then repeat to create two layers.

  7. Dust with cocoa powder and enjoy.
